The smell of garlic, often experienced as unpleasant after consumption, stems from the by-products of sulphuric constituents like Alliin, which gets converted to Allicin.Garlic is an important source of selenium. Apart from structural carbohydrates (especially fructan), the garlic bulb also contains sulphuric compounds such as the odourless Alliin and its precursors gamma-glutamyl-alkylcysteine, an adduct with Vitamin B1 (Allithiamine), Adenosine and Alliin- Lyase. Through cell injury (for e.g.: during reduction), these enzymes come into contact with Alliin, wherein the compound is broken down and the actual agents thiosulfinate, allicin and other secondary products are first formed. The substances contained in garlic lower the lipid levels in the blood and thereby have a preventive effect while protecting the vasculature.
